Abstract
The purpose of this final project was to find out how standard operational procedure of the waiter or waitress at Al Hamra Surabaya restaurant was. The writer observed and carried out work as a waiter at Al Hamra Surabaya. The writer concluded that the waiter and waitress at Al Hamra restaurant have run SOP (standard operating procedures) well, starting from welcoming guests, service, and serving dishes to guests.
