Abstract

The purpose of writing this Final Project is to determine the processing of pasta in the Surabaya Play Domicile restaurant. The author made observations at the Surabaya Play Domicile restaurant and worked as a cook. The author
concludes that pasta processing at the Play Domicile Surabaya restaurant is initiated by making pasta dough which will be created into 3 kinds of processed pasta, namely: 3 color fittucini, black ink fittucini and tertolini. Although the method of processing 3 kinds of pasta is the same, but the difference is in the
shape and color.
