Abstract

The purpose of this research is with the application of hygiene sanitation and
storage procedures which is good and right for kitchen utensil, is expected to expedite
operations at the restaurant JAMOO Shangri-La hotel Surabaya.
The method used is descriptive methods with qualitative research form. The
data source in this research is the primary data and secondary data. Data collection
techniques used are observation, interview and the study of librarianship. The main
data-collecting instrument in this study is the researchers themselves as an employee
of an internship at hotel Shangri-La.
The results of this study, kitchen utensil washing procedures showed that
good and right, is using 3 sink as a media to clean kitchen utensil. As well as for the
storage of equipment using shelves made of stainless steel, because stainless steel
material of the shelving is strong and not easily rotted. From the results of such
research, it can be inferred that the cleanliness and tidiness of the kitchen utensil
storage can helps the operational fluency in JAMOO restaurant.
