Abstract
This descriptive study aims to determine the recipe standards a'la carte menu in the restaurant Express Amaris hotel Embong Malang Surabaya. The procedure of
research is to observe the standard recipe a'la carte menu available which includes the purpose of collecting data and results.
A'la carte menu at restaurant Express is divided into 4 parts: 1). Appetizer, 2). Soup 3). Main course 4). Snack. Standard recipes a'la carte menu in the restaurant Express Amaris Hotel Embong Malang Surabaya is very
important to produce a quality product and to meet the prescribed standards, including appearance, taste, aroma and color.
