Abstract
This descriptive study aims to determine the standard pastry recipes at Hawaii Bakery Pekanbaru, Riau. The research procedure is to observe the standard pastry recipe at the Bakery. The author made observations on the standard pastry recipes in hawaii bakery Pekanbaru Riau. In this study, the authors limit themselves by describing the standard recipes of cakes and breads only at Hawaii Bakery Pekanbaru Riau. The author draws the conclusion that the standard of pastry recipes at Hawaii Bakery Pekanbaru is very important, and on November 1, 2017 the standard recipes for pasiseri have been set by the company, to produce products in accordance with predetermined standards, which include appearance, taste, aroma and color.
