Abstract

Spinach plants (Amaranthus spp.) Or spinach vegetables is one type of vegetables that is not familiar to the community almost all people know and consume this type of leaf vegetables. Having many nutrients needed by the body, the price is affordable and easy to produce. Cookies are one type of dry food that is a lot of variety and taste, favored by all circles both children and adults. But not a few cookies are in the community today are the cookies are more concerned with the appearance and taste, less care in terms of health.
The purpose of this study is to find out how to make cookies with the addition of puree spinach is the most preferred by the respondents. This research method writer use method single variable where this method only distinguish object to be researched only (puree spinach) and equate all other ingredients, addition of puree spinach that is 35 gram, 70 gram and 95 gram. Spinach cookies are made by: make a spinach puree first and spinach is washed and then blended until smooth after that to reduce the water content found in spinach use the filter to reduce the water content. Then to make the dough mixture of margarine and egg in a baking sheet then add milk powder and refined sugar after the color becomes pale, add flour and cornstarch mixer until the dough is mixed smooth and smooth. After that add the chocochips into the mixture until smooth with the hands, then add the spinach puree stir the dough using the hand until mixed perfectly, after it was printed and in an oven with a temperature of 170 ° and time 50 minutes.
Based on the preferred level of respondents X1 with the addition of puree spinach as much as 35 grams and X2 with the addition of puree spinach as much as 70 grams with acceptance of the favorite level is quite like. Product X1 with taste acceptance is quite sweet and taste enough spinach, the color is quite brown and greenish, the texture is soft (smooth), the crispness is quite crunchy.
